Stuffed Cucumber

This recipe is a bit different. The recipes I’ve looked at call for cream cheese. There is no cream cheese in this recipe. We eat these as an entreé with a green salad and garlic bread.

Ingredients

  • 4 – 6 Cucumbers (Depending on size. If they’re small, add more)

  • ½ c. onion

  • 1 tbls garlic – minced

  • ⅓ c. green bell pepper – finely chopped

  • ½ c. red, yellow & orange peppers – finely chopped (optional)

  • 1 fresh basil leaf – finely chopped (optional)

  • 1½ lbs. ground sirloin

  • 1½ c. cooked rice

  • shredded cheese (your choice of cheese. I use the shredded fiesta blend)

Directions

  • In an 8 qt. cast iron pot or a magnalite roasterette pot, add a tbls of olive oil or spray with cooking spray and brown ground sirloin. Once the meat is browned, remove from pot and set aside.
  • In a small cast iron skillet, sauté the onions, garlic and peppers, slowley so they won’t burn. When they are almost done, add the chopped basil leaf.
  • While vegetables are slowly sautéing, slice cucumbers in half lengthways. Using a spoon, remove seeds and discard (unless you want to keep them and dry them out to plant). Once seeds are removed , scrape cucumber pulp with a tablespoon into a bowl (this gets pretty messy) being very careful not to tear or rip the cucumber shell. After all the pulp is scraped, put into the pot the meat was browned in.
  • Cook the pulp, on a med burner, until it’s almost clear. Add meat and vegetables, mix together. Put burner on med-low. If mixture is too dry add water or beef broth to mixture. Add cooked rice. Stir everything together until it’s evenly mixed.
  • Lay cucumber shells in a pan (I line a cookie sheet with aluminum foil to lay them on. Makes for an easy clean-up). Spoon the mixture into the cucumber shells. Top with some shredded cheese and bake in a 400° oven until cheese is melted and starting to turn brown.
  • Remove from oven and serve.
