Orange Upside Down Cake

Ingredients
- Sauce
½ cup brown sugar
3 tbls orange juice
3 tbls butter
2 oranges (peeled and thinly sliced)
- Cake
¼ cup unsalted soft butter
½ cup sugar
1 lg egg
1 tsp vanilla extract
Orange zest from one orange
⅛ cup orange juice
½ cup yogurt
1 cup all-purpose flour
¾ tsp baking powder
¼ tsp baking soda
Directions
- Preheat oven to 355° F
- Put brown sugar and orange juice in saucepan and heat gently until it comes to a bubble. Add butter and mix well.
- Pour the sauce into the base of a non-stick spring form pan. Put orange slices on the bottom of the pan in the sauce.
- Put butter in a bowl. Add sugar, eggs, vanilla and mix until creamy.
- Add in orange zest, juice and yogurt and mix well.
- Add in flour, baking powder and baking soda and fold gently.
- Spoon mixture into spring-form baking pan over sauce and orange slices. Spread mixture evenly.
- Bake for 40 – 45 minutes or until toothpick comes out basically clean.
- Remove and cool completely.
- Slice and serve.
Notes
- I put a piece of parchment paper with aluminum foil over the parchment paper. The first time I made this recipe, it spilled over into the bottom of the oven. The spring-form pan does leak and it will make a mess.
- I actually got this recipe from Pinterest. I had gotten two bags of oranges and needed to do something with them before they would ruin. So I searched Pinterest.
